Homemade Risotto Recipe
Description
A creamy Italian rice dish cooked with broth until it reaches a rich, velvety consistency.
Ingredients:
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 300g arborio rice
- 120ml dry white wine
- 1 L warm chicken or vegetable stock
- 50g grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- Warm the stock in a saucepan and keep it at a gentle simmer.
- Heat the oil and butter in a large pan, then sauté onion until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in the rice and toast for 1-2 minutes until the edges look translucent.
- Pour in the wine and stir until absorbed.
- Add stock one ladle at a time, stirring often, until absorbed before adding more.
- Continue until rice is creamy and al dente, about 18-20 minutes.
- Stir in Parmesan, season with salt and pepper, and serve immediately.
