  1. Warm the stock in a saucepan and keep it at a gentle simmer.
  2. Heat the oil and butter in a large pan, then sauté onion until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in the rice and toast for 1-2 minutes until the edges look translucent.
  5. Pour in the wine and stir until absorbed.
  6. Add stock one ladle at a time, stirring often, until absorbed before adding more.
  7. Continue until rice is creamy and al dente, about 18-20 minutes.
  8. Stir in Parmesan, season with salt and pepper, and serve immediately.
